Chop To It

Chophouse Miami ames Beard Award-nominated Chef Jacques Van Staden, who earned a Michelin star as former executive chef of the famed Las Vegas Alizé at the Top of the Palms, brings his globally inspired cooking style to Miami as chef/owner of the revitalized and reimagined Chophouse Miami Bistro & Lounge. Under new management as of 2010, the restaurant unveiled a new look and a new menu in November—and Jacques’ brother, Pieter Van Staden, a talented chef in his own right, has come aboard to assist the burgeoning restaurateur. Expect a moderately priced menu of globally inspired small plates, sushi, flatbreads, chop block specials—the Chophouse version of a bento box—fresh fish and premium cuts of meat. How does a succulent Tuscan seafood sausage with white beans, basil, pimentos and saffron bruschetta sound? Or a tamarind-glazed pork belly with papaya salad topped with toasted peanuts and drizzled with a yellow curry vinaigrette? We could go on, but it’s best if you just go. 300 South Biscayne Blvd., Downtown Miami, 305.938.9000; chophousemiami.com.
